Not joking, I've removed almost all mods and I still can't find the culprit. I was doing a delivery and when exiting the ramp to enter Padborg I crashed, went and disabled mods one by one and for once I thought I fixed it so for good measure I went back and no, still crashed. I'll attach the game log below.
Please, I wasted like 1 hour troubleshooting and I just don't know what it's causing it.

Your game is running out of buffer.
Try doing this:
Use notepad to open config.cfg at Documents\Euro Truck Simulator 2
Find r_buffer_page_size 10
Change 10 to 30
Save the file and restart the game.
