Hello. I'm starting to play ETS2 again after 3 years, I was just wondering since I don't have all map dlc purchased, I'm missing Iberia and West Balkans, will older promods version v2.57 work with newest game version? That version of promods was newest that didn't require map dlc I don't have.

No, it's not possible with newest version.
For this ProMods Europe 2.57 version, you need to use 1.42.x version of the game that is possible to be downgraded using Beta options and set to "temporary_1_42_x - 1.42.x for incompaible mods" in Steam.
