Most exciting is road network and most boring are navigation signs.

Most exciting: Planning and building an empty map (building an intersection with blank roads or city)
Exciting: Adding visual details
Boring: Filling all map holes with bezier patches
Most Boring: Navigation signs

Building cities is a best part of mapping. Recreating mountainous or hilly terrain is the worst part.

If I could map, my favorite would be signage :)

Volleyball,
You can make signs without mapping, like Ellot.
Isn't your favorite part saying "It's ready when it's ready"?

Not really, as you still need to place signs or create new signage, which are a part of "mapping". ;)

Hm...
But it can be proven that everyone can make good signs, independently of mapping talent. Probably same for placing.
