I'm having some trouble filling these terrain holes. Are there any good ways of doing it?

Also, I'm having some trouble trying to find good models of buildings. Are there any buildings in the game that look like the buildings here?: https://www.google.com/maps/@59.0007023 ... 312!8i6656

Use Terrain / Bezier patches to fill holes "easily".
And I recommend using less road nodes - you can usually achieve the same effect with Free Node Rotation.
