It'll always prefer a ferry instead of roads, so you'll get strange routes.

Because ingame gps would route Oslo - Copenhagen delivery through Germany with this ferry enabled instead by going through Sweden which is less time consuming in reality. Game considers ferries as 0 time teleports and it makes quicker routes with ferries rather than by land roads.

I agree. It may be realistic (I think) but it is annoying not to drive. Some ferries around places would make sense, like Portsmouth to Bilbao, but the ones you specified are basically obsolete.

but as a lazy American, who relied on Google on directions, I really don't want to do that
There is actually one time the GPS worked in my favor: between Rotterdam and Duisburg the GPS will send you via Antwerpen, which is like a 6 hour drive. But if you go via Amsterdam and Arnhem instead it'll take you 4 hours. So you have 2 hours extra driving time and can still charge the customer for it.
You just really need to learn to go through the entire route and research every alternative. Also be wary of the GPS liking you to get off highways and then quickly to another, even though there is a very solid interchange not far away, in some cities.
