I'd imagine max 4-5 companies in all, Klaksvik can easily be a company and nothing else
2 companies in Thorshavn is too much imo better to have them outside the city

The Faroe Islands are nice, but you need to think about SCALE in ETS 2!
So my suggestion is just a small stop in Tórshavn, with (maybe) a company and a service station. Maybe you can put a countryside-road in, leading to Euro-Acres (Again, just a suggestion).

I don't have a problem with one company in Thorshavn and one in eg Klaksvik, never intended FO should have 20 companies
It's just possible locations, most intersection should be "blocked", but roads can be needed for the scenery

I have tried to represent this in my conept plan of Faroe Islands. Just 1 company + garage & ferry port in Torshavn, and farm company outside of Torshavn (+/- 30 ingame kms). Anyways developers can't add all cities and roads in Faroe islands, due of scale.

My main struggle is that no matter what you make in the Faroe Islands, it's too few to make it interesting. What's the point of doing a 1-day ferry trip just to reach an island with 1 city with a very few companies?
