Which is better for handling, top speed and visibility. I play quite aggressively and quickly so I need to see but at the moment the wing mirror is blocking my left window. Any tips?

I recently completed my collection of all 11 default trucks, so I've got experience with both of these and more. In reality, the Streamline and standard R Series are exactly the same in terms of performance, with the only differences being additional cosmetic parts on the Streamline (black "V8" interior, black grille with chrome inserts, V8 logos, Streamline paint job and new vents on the front). I'm not sure what you mean regarding the mirrors (it is possible to add/remove the small mirrors attached to the front and opposite side windows), but if you really want an aggressive, powerful truck you need to invest in a Volvo. I've listed the max power output of each truck below:

Volvo FH - 750hp / 551kW
Volvo FH16 Classic - 750hp / 551kW
Scania R Series Streamline - 730hp / 537kW
Scania R Series - 730hp / 537kW
MAN TGX - 680hp / 500kW
Majestic Across - 598hp / 440kW
Iveco Stralis Hi-Way - 560hp / 418kW
Iveco Stralis Active - 560hp / 418kW
Renault Magnum - 520hp / 382kW
DAF XF - 510hp / 375kW
Renault Premium - 460hp / 338kW

Visibility: Magnum or TGX XXL (avoid sunvisors), handling possibly Scania.
